Grown at altitudes of 1450 to 1500 meters above sea level, this 100% Castillo variety coffee has undergone meticulous processing that sets it apart from others. The coffee cherries were subjected to anaerobic dry fermentation for 72 hours with the mucilage. During this crucial stage, lychee and wine yeast were added, giving the coffee a complex and intriguing flavor profile. After fermentation, the cherries were gently separated from the mucilage and dried on elevated beds until they achieved the perfect moisture content.

The Castillo variety, developed by the Federación Nacional de Cafeteros, is known for its high yield and resistance to coffee leaf rust, ensuring excellent crop quality. As a result, the coffee is packed with vibrant notes of lychee and strawberry, complemented by the smooth sweetness of vanilla and caramel.
